I cannot find where I can simulate an appstore app in the Designer, even though the documenation about AppStore Apps says it is there.

When you start simulator, you will see multiple toolbar buttons on the top. One of them is Simulate as AppStore App.

You have to understand though, that there are almost no differences between MobileTogether and AppStore apps. The main difference is the value of variable $MT_IsAppStoreApp which you can use to modify your app to look or act a little different when it is deployed to the app store. Otherwise they are practically identical
