If I post a new version, say version 7 can I delete the previous 6 and will customers who purchased from the Play store be alerted that a new version is available? or are they alerted even if the old versions are still on the server?

Not sure if this is a question for you or Google but hopefully you can give me guidance on this.

Are you talking about the compiled app published on the Google Store? If yes - Android is normally preconfigured with auto-update of all apps, but users can switch it off - in this case they have to update manually.

If you are talking about the part which is deployed to server, I would very much recommend not to delete it from server, to make sure that those users which did not update yet can still work.
